Sweet Potato Hummus

I don’t know about you, but i can never go passed a good Hummus dip. Roasted pepper, basil, pine nut, caramelised onion or just the classic. I love all of it! So here’s a little twist on one to keep things fun.

Roasted Sweet Potato Hummus w/ Hemp seeds:

Preheat oven to 200 c
Toss the sweet potatoes and garlic with 1 tbs of oil, adding in salt and pepper to taste
Line a tray with baking paper and bake for 20 min or until tender and beginning to brown
Remove and cool
Place the potatoes and garlic with all other remaining ingredients into the processor and blend until smooth
If the chickpea liquid is just water and salt, you can add 1/2 a cup and blend again, otherwise just add water
Taste and season
Refrigerate until serving

Ingredients

  • 2 medium golden sweet potatoes (peeled and diced)
  • 4 cloves of garlic (peeled)
  • 1/3 cup olive oil
  • 1 can chickpeas drained (liquid reserved)
  • 2 tbs tahini
  • 1 small lemon (juiced)
  • 2 tsp ground cumin
  • 1/2 tsp hot smoked paprika
  • 1/2 tsp chilli flakes
  • 1/4 cup hemp seeds
  • salt and pepper to taste
